Principles & Practice
We provide hospitality at the UK's premier sporting, corporate, and private events. As an independent, owner-led business, our approach is defined by two realities: a commitment to refined service and a responsibility to manage the resources required to deliver it.
Our purpose is to show that exceptional food and a reduced environmental footprint can go hand in hand by championing British farmers, fishers, and growers working to higher environmental and welfare standards.
For our team, sustainability is a practical discipline embedded directly into our daily operations. Rather than a statement of intent, it is the standard we work by every day.

Carbon Literacy
Achieving a sustainable operation relies on an informed team. To foster this culture, we are embedding Carbon Literacy training across our entire business.
Two of our team members are already certified, and from October 2026, we are rolling out this training across all roles, from our prep kitchens to front-of-house management. This collective baseline equips our team with the practical knowledge to make carbon-conscious choices in their daily work, support our clients' sustainability goals, and uphold our mission.

Data-Driven Culinary Design
Over the last 25 years, we have cultivated a trusted network of local, seasonal suppliers. Today, we are layering data over those relationships to eliminate guesswork.
We are currently auditing the carbon footprint of our entire supply chain to establish an accurate operational baseline. This data allows us to thoughtfully engineer our menus, such as designing exceptional, plant-forward courses, ensuring our dishes are as environmentally considered as they are refined.

Operational Logistics of Outdoor Sites
Many of our events take place outdoors, in settings including historic sporting estates and private grounds. We approach these environments with a strict, low-impact operational strategy that respects the balance of nature and protects local biodiversity. By tightly managing our transport logistics, waste streams, and temporary infrastructure, we safeguard local habitats and ensure our physical presence is entirely temporary.

Verifiable Accountability
For our corporate and sporting partners, intentions are not enough; impact must be auditable. To ensure our data is transparent and verified, we have partnered with sustainability consultancy Bold Green Strategies. This independent oversight ensures our progress is objectively validated rather than self-assessed, keeping us reporting-ready and able to confidently share credible data with our partners.

Our ongoing commitments include:

Comprehensive Carbon Accounting
Using the Harker™ CO2e methodology, we are actively measuring our emissions across Scopes 1, 2, and 3 to build a credible, long-term Net Zero strategy every year.

B Corp Certification
We are currently working towards B Corp certification, and look forward to sharing more details on this milestone soon.

Event-Specific Impact Reporting
Beginning in 2027, we will undertake event-specific reporting by undertaking two detailed carbon-footprint event case studies per year. This will allow us to establish precise operational benchmarks and track where real improvements are happening on the ground. For partners requiring this data for their own reporting, this can be arranged on request as an additional service.

Impact Reporting
From 2027 onwards, we will publish an annual Impact Report. This document will provide a transparent overview of our progress over the year, sharing our operational challenges and celebrating our milestones and environmental wins.
