Built By Nature Annual Summit

Catering for 300 Guests

We were thrilled to work alongside Gaea Events to deliver the catering for Built By Nature’s two-day annual summit. The event opened with a tour of innovative sustainable design projects across London, giving guests a first-hand look at thoughtful environmental architecture. By early evening, everyone gathered at Paradise SE11 for drinks, canapés, and a presentation. Day two brought a full programme including more presentations, panels, an awards ceremony and lively discussions focused on the future of sustainable building practices. Across both floors, our Cavendish team served a vibrant vegetarian and vegan menu—sustainably sourced and designed to complement the summit’s theme.

Over two days, our chefs prepared many plant-based dishes for guests from breakfast to dinner.

Inspiring and tempting dishes including canapés:
- White bean hummus, wood fired peppers, marigold
- Morchella palmier with apple gel & golden cross goat’s cheese

Bowl food included:
- Pea, mint, green beans, Graceburn feta, crunchy seeds, chardonnay vinaigrette
- Harissa butternut squash, charred aubergine salsa, herby couscous
- Crisp brick pastry tarts, whipped feta, charred Romana peppers, kalamata olives, basil

A highlight of the event, Paradise SE11 is regarded as being one the most sustainable buildings in the country and is impressive with both environmental statistics and natural beauty. A timber structure building offering calm and serene space full of light and with connections to the outside, perfect for this BBN summit. It showcases what can be achieved with responsible building and sets a new standard for sustainable space.

The Cavendish team served 300 guests’ lunch over a 40 minute period to help keep the days events on track and on time.
